Recipe: Chicken Parma with Chips & Pepper Gravy

Chicken Parma
 With Chips & Pepper Gravy

(These are Australian measurements, I’m not sure if they are different for other countries but I’m sure you can find a conversion website on Google)

Cooking time: 20 minutes
Oven temperature: 230 degrees Celsius

Utensils needed:
2x Oven trays
2x Teaspoons
Chopping knife
Grater
Paper towel
Plates
Knives and Forks
Cup

Ingredients:
Baked Honey Leg Ham
Tasty Cheese
Olive Oil
Salt
White Hungarian Salami (optional)
McCain Beer Batter Chips – Fish Shop
Raguletto Pasta Sauce – Bolognese Classic Tomato
Chicken Breast Schnitzel Fillets (love heart shaped - purchased from “Coles” deli)
Gravox Pepper Sauce (Gravy)

Method:
1) Set oven to 230 degrees Celsius. Let it heat up for 5 minutes then place chips onto a tray and put the tray into the oven. Set the timer to go off in 10 minutes.

2) Turn stove top on to a high heat and pour a decent amount of oil into a pan. While you are waiting for it to heat up, chop your schnitzel fillets in half. You only need 1 half per person, as a whole one will be way too filling.

3) Cook your schnitzels until they are golden on both sides (1-2 minutes each side). Once they are done, place the schnitzels onto a piece of paper towel to absorb the excess oil. Grate a big handful of cheese (roughly ¼ - ½ cup). Place your schnitzels onto a tray, and then spread 2 - 3 teaspoons of pasta sauce on top.

*When the timer goes off, sprinkle salt over the chips then turn them over. Place the tray back into the oven for another 10 minutes.

4) Sprinkle a small handful of cheese on top, and then place 2 slices of ham on top of that – you may need to cut 1 slice in half so it fits.
(Optional: place 2 slices of salami on top of the ham)

5) Place another 2 – 3 teaspoons of pasta sauce onto the schnitzel, and then sprinkle on more cheese. By the time this is all done you should have 5 minutes left. Place your schnitzels into the oven for those last 5 minutes – do not change the temperature.

6) Place 1 – 2 teaspoons of pepper gravy into a cup, then add roughly ½ cup of boiling water.
Stir well. Add more water or gravy until you reach your desired consistency.

7) Carefully take the chicken parmas out of the oven and place onto plates. Then take the chips out, sprinkle with salt and place onto the plate. Pour gravy over the chips and serve.

This recipe tastes absolutely amazing! It’s perfect for dinner or lunch.
The parma tastes nice reheated, so you can even take it to work the next day.

It’s so quick and easy to make and costs under $20.00 to feed the family.

"Cry Baby, Cry"

On the weekend I created the prosthetics, special effects makeup, natural-glam female makeup/hairstyles and the anti-shine male makeup for the Deakin University student horror film "Cry Baby, Cry" by Wildcard Films.

This was the first time I have worked on a film and I had not previously met any of the cast or crew.

I worked from 8:30am to 9pm on Saturday, and from 4pm to 7:30pm on Sunday.

I did not get paid, however I did get fully reimbursed for the materials I purchased/used, I was able to take as many photos as I wanted for my portfolio, I was accredited for the makeup and hair styling and I am getting sent out a DVD of the film once it has been edited which I can also use for my portfolio.

The cast and crew were thoroughly impressed with the looks I created and have asked me to work on their next upcoming films.
